Hamburger Cauliflower Casserole

The other night, I was looking for something warm, filling, and quick to make for dinner. I came along this wonderful recipe, and decided to give it a go! Not only was it delicious, it was also super simple. Another great thing about this recipe is that it uses very few dishes =equaling= easy clean-up! My kind of dish! So, if you're looking for a quick, simple dinner, or you're just craving the taste of a yummy cheeseburger, give this dish a go! 

**Just a little note before we continue. I ended up doubling the recipe in order to have plenty of leftovers; therefore, the pictures are of a double batch, not the 8x8 dish batch that the recipe would produce!**

What You'll Need:
    1 lb. ground beef (I used lean ground turkey)
    1 t. onion powder
    1 t. garlic powder
    1/2 c. sour cream (I used reduced fat)
    4 oz. cream cheese (I used reduced fat)
    8 oz. frozen cauliflower
    1/2 c. shredded cheddar cheese
    *I also added a dash of salt, pepper, and oregano for more flavor

How to Throw It All Together:
Brown beef. Add onion powder, garlic powder, sour cream and cream cheese (and RO*TEL® tomatoes, salt, pepper, and oregano, if you so choose). Cook and stir until well blended. 

Cook cauliflower until very soft. Drain and pat with a paper towel to soak up excess moisture. Add to beef mixture. 
Ready to go in the oven!













Pour into a greased 8x8 pan, top with cheese, and bake at 350 degrees for 30 minutes.














Now, just dish it out and serve it with (or without) the veggie of your choice! Ta-da!
